In the bowl of a food processor, process feta, cream cheese, and sour cream until light and airy, about 2 minutes. Add lemon zest and juice, and season, to taste with salt and pepper (it may not need any salt, taste it first!).
Make the hot honey. Heat honey in a small pot over low heat. Add chili flakes and thyme. Turn off heat and let sit 5 minutes. Transfer feta to a serving bowl. Drizzle warm honey over whipped feta and serve immediately.
